Til Ladoo
Til ladoo are traditional Indian sweets made from toasted sesame seeds bound with jaggery syrup: a festive treat for Makar Sankranti.
Ingredients
-
Hulled white sesame seeds: 100g
-
Black sesame seeds: 50g
- Grated jaggery (or brown sugar): 100g
- Ghee: 2 tablespoons
- Ground green cardamom: 1/2 teaspoon
- Crushed almonds or peanuts (optional): 2 tablespoons
Instructions
-
1
The Toasting: In a dry pan over medium heat, toast the white and black sesame seeds separately until fragrant and lightly popping, 3-4 minutes each. Set aside.
-
2
The Syrup: In the same pan, melt the ghee, then add the jaggery. Melt over low heat, stirring, until smooth: don't let it harden (test: a drop in cold water should form a soft ball).
-
3
The Mixing: Off the heat, immediately stir in the toasted sesame seeds, cardamom and crushed nuts. Mix quickly, the syrup sets fast.
-
4
The Shaping: While the mixture is still warm but workable (lightly oil your palms), shape it into walnut-sized balls.
-
5
The Rest: Let set at room temperature for 30 minutes before serving.
Tips
🎉 Til ladoo are traditionally made for Makar Sankranti (mid-January), the Indian festival celebrating sesame and jaggery as symbols of sweetness and new beginnings.
💡 If the mixture hardens before shaping, warm it briefly over very low heat to soften it again.
🌰 No jaggery on hand? Swap in brown sugar or coconut sugar for a slightly less caramelised result.
