Anda Bhurji is the Indian version of scrambled eggs, but with much more character! Unlike creamy French scrambled eggs, Bhurji is firmer, spicier and full of textures.

Ingredients

  • Eggs: 4 large
  • Red onion: 1 large, finely chopped
  • Ripe tomato: 1, diced
  • Garlic: 1 clove, chopped
  • Fresh ginger: 1 cm, grated
  • Fresh coriander: a handful
  • Turmeric: 1/2 teaspoon Lakadong Turmeric Powder
  • Chili powder or paprika: 1/2 teaspoon
  • Garam masala: 1/2 teaspoon Garam Masala
  • Salt and pepper
  • Oil or butter: 1 tablespoon

Instructions

    The Base (Masala): Heat the oil. Fry the onion until translucent and golden. Add garlic and ginger, cook for 1 minute.

    The Vegetables: Add the diced tomatoes. Cook for 3-4 minutes. Add the spices (turmeric, chilli, garam masala) and salt.

    The Eggs: Crack the eggs into the pan. Stir constantly to break the eggs into small pieces coated in spices.

    The Finishing Touch: As soon as the eggs are cooked but still slightly moist, turn off the heat. Sprinkle with fresh coriander.

Tips

Delicious in a baguette or on toasted country bread. For a gourmet touch, add grated cheese (Emmental or Comté) just before serving.
