    The Spiced Soffritto: Heat oil in a large pot. Add whole spices (cloves, cinnamon, cardamom, bay leaf), then onions. Fry until golden. Add garlic-ginger paste.

    The Yellow Base: Add tomato and all ground spices (turmeric, chili, coriander). Cook until the tomato breaks down and oil separates.

    The Vegetables: Add potatoes, cauliflower and peas. Stir to coat well. Sauté for 2-3 minutes.

    The Absorption: Add drained rice, stir gently. Pour in hot water and salt. Cover tightly and cook on very low heat for 12-15 minutes. Let rest 5 minutes without opening.

Tips

Potatoes are essential in a real Tehri. The turmeric gives the characteristic deep yellow colour.
