Ingredients

  • Plain Greek yogurt, well chilled: 400g (about 1.5 cups)
  • Caster sugar or icing sugar: 60g to 80g
  • Warm milk: 1 tablespoon
  • Saffron strands (about 10 to 15 strands): 1 pinch
  • Ground green cardamom: 1/4 teaspoon Njallani Green Cardamom
  • Grated nutmeg (optional): 1 pinch
  • A few crushed pistachios or almonds: Garnish

Instructions

    Infuse the saffron: in a small bowl, mix the warm milk and saffron strands. Let it infuse for 10 to 15 minutes until the milk turns a beautiful orange colour.

    Prepare the base: in a large bowl, add the well-chilled Greek yogurt. Add the sugar.

    Whisk: beat vigorously until the sugar is dissolved and the yogurt is perfectly smooth and silky (about 5 minutes). Avoid using a powerful electric mixer.

    Flavour: add the saffron milk, ground cardamom and nutmeg. Mix gently.

    Chill: cover the bowl and refrigerate for at least 30 minutes. Shrikhand is best served very cold.

    Serve: divide into individual bowls and garnish with crushed pistachios or almonds.

Tips

Use a good quality Greek yogurt that is not too acidic. If there is whey on the surface, discard it before starting.
