Aloo Tikki (Indian Potato Patties)
Aloo tikki is one of North India's most popular street snacks: spiced potato patties, crispy outside and soft inside, often topped with chutneys to make “aloo tikki chaat”. A simple, vegetarian and gluten-free recipe, perfect as an appetiser.
Ingredients
- 500 g potatoes, boiled and mashed
- 50 g chickpea flour (besan)
- 1 tsp cumin seeds
- 1 tsp ground cumin
- 1 tsp dried mango powder (amchur)
- 1/2 tsp garam masala
- 1 green chilli, finely chopped
- 1 piece fresh ginger, grated
- 2 tbsp fresh coriander, chopped
- 50 g cooked peas (optional)
- Salt, to taste
- Neutral oil, for frying

In a large bowl, mix the mashed potatoes with the chickpea flour, cumin seeds, ground cumin, mango powder, garam masala, green chilli, grated ginger and fresh coriander. Season with salt.

If using peas, gently fold them into the mixture.

Shape the mixture into flat patties about 7 cm in diameter.

Place the patties in the fridge for 30 minutes to firm up.

Heat a splash of oil in a pan over medium heat.

Cook the patties for 4-5 minutes on each side, until golden and crispy.

Drain on paper towel and serve immediately, hot.
Tips
Aloo tikki is often topped with mint-coriander chutney, sweet tamarind chutney, sliced onion and whisked yoghurt to make “aloo tikki chaat”. The chickpea flour binds the mixture without needing egg, making the recipe naturally vegetarian and gluten-free. For an extra-crispy version, roll the patties in fine semolina before frying.
