Khichdi is the ultimate comfort food in India — the equivalent of grandma's chicken soup. Rice and moong lentils cooked together in plenty of water until you get a creamy, comforting texture.

    Toasting (key step): Heat the moong dal dry in the saucepan for 2-3 minutes until it smells nutty. This is what gives the authentic flavour.

    Washing: Mix the rice and toasted moong dal. Wash them together 3 or 4 times.

    Overcooking: For 1 volume of the mix, use 4 volumes of water. Add salt, turmeric and asafoetida. Cook until the grains lose their shape and become a creamy mass.

    The Tarka: In a small ladle, heat ghee or oil. Add cumin seeds and a whole dried chilli. Pour over the steaming mixture.

Tips

Serve with papads and achaar (pickle). Asafoetida brings an onion/garlic flavour without adding any and aids digestion.
