Strawberry Salad with Timut Pepper
Dessert is where Timut pepper is most surprising. Its grapefruit and lychee notes elevate fresh fruit. A restaurant-worthy dessert with just three ingredients.
Ingredients
- Strawberries (or orange/grapefruit mix in winter): 500g
- Cane sugar or honey: 1 tablespoon
- Timut pepper: 10 grains
- Fresh mint or basil: a few leaves

Preparation — Cut the fruit and place in a bowl.

The Pepper — Crush the Timut pepper with a mortar (or the flat of a knife) into a coarse powder.

Assembly — Sprinkle over the fruit, add the sugar and toss gently.

Infusion — Refrigerate for 15 minutes. The pepper will infuse the fruit juices.
Tips
In winter, use a mix of citrus fruits (orange, grapefruit) instead of strawberries. Timut pepper is enhanced by contact with the acidity of fruit.
